When food makes you sick

What is food intolerance?
 
Food intolerance is different from allergies. An allergy sees the body trigger IgE antibodies immediately upon consuming a particular food. Allergies can cause serious symptoms, like difficulty breathing, an itchy rash or swelling, and even anaphylactic shock.
 
With a food intolerance, the body creates a different type of antibody, namely IgG rather than IgE. These antibodies cause slower, more subtle reactions to the foodstuff with symptoms not appearing until two to three days after eating.
 

Food intolerance can be categorized into two types:

  • Toxic reactions (such as food poisoning) are caused by harmful substances.

Along with hereditary conditions, there can be many causes of food intolerance. Symptoms can include an infirm gastrointestinal immune system, an inefficient digestive system, problems with absorption, and an imbalance of microorganisms in the intestine.

Symptoms of food tolerance are varied and can include:
